I've been making an effort this past week to eat 'healthy'. I am generally a healthy eater, but I do have a sweet tooth and a weakness for all things bready which needs reigning in every now and again. So I wanted to try and swap those lunchtime sandwiches for something a little different and frankly, a bit more exciting. My answer is salad. I'm not talking about a few sad lettuce leaves and slices of cucumber here: I'm talking big salads. A proper salad will fill you up, take you over-and-above the recommended 5 portions of fruit and veg a day and, most importantly, will taste absolutely delicious.
You don't need a recipe either. Just follow your instincts: pair up what's in your fridge with what is in season and readily available to buy. Shake up a quick dressing in an old jam jar: olive oil & balsamic vinegar, olive oil & lemon juice, a bit of mustard, some chopped herbs maybe?
