Grilled Salmon with a Tasty Tomato Dressing

Let's pretend summer is still here with this simple but tasty supper dish. The tomato dressing is quick to prepare and makes the fish extra special, especially with a speedy green salad and feta cheese. Just the sort of meal you can dash off after a hard day at work.

Ingredients: Serves 2. 

2 salmon fillets

100g of baby spinach, washed

100g of rocket, washed

100g of broad beans

200g of feta cheese

200g (half a can) of chopped tomatoes

1 garlic clove

1/4 onion

Extra virgin olive oil (optional) 


STEP 1: Place salmon fillets under the grill on a medium heat for 10 – 12 minutes. 

STEP 2: Meanwhile, heat a drop of oil in a pan, add garlic and onion and fry for a couple of minutes. Throw in the tomatoes and simmer for a further 5 minutes (prepare first and leave to cool if preferred).

STEP 3: For the salad, simply mix together the baby spinach, rocket and broad beans, drizzling with extra virgin olive oil. 

STEP 4: Rain crumbs of feta cheese over the salad before popping the salmon on top and covering with the tomato dressing.
